Kolachi (also called kolache) are made with a yeasted sweet dough, similar in texture to Danish pastry. These delightful treats originated in Central Europe and are most closely associated with the Czech Republic. They’re also beloved in Poland, Ukraine, and Russia. The name comes from the Slavic word kolo, meaning circle or wheel — a nod to their traditional shape.
In the United States, Czech immigrant communities in Texas, Oklahoma, and Wisconsin introduced a savory spin called klobasniky (or klobasnek in singular form). These are typically roll-shaped and filled with sausage and cheese — think of them as a hearty cousin to pigs in a blanket.
